Hello, Lovelies!

I’m at home in my pyjamas right now, recovering from a crashingly bad case of strep throat and all of the complications that come with that from being immuno-compromised.

I can tell I’m getting better because I’m suddenly hungry for Vegemite toast and a good cup of tea.

Vegemite is the salty, malty, yeasty black spread that Australians have grown up with – similar to the English Marmite. It’s an acquired taste, and there is an art to using this black gold, so that you actually enjoy it. It’s great for breakfast, or as a snack anytime.

Sadly, most Vegemite novices throw Vegemite around like it’s Nutella, take a bite, are overwhelmed by the Vegemite overdose and then never come back for a second try!

Let me show you how it’s done.

Ingredients

  • Bread of your choice (I’m partial to sourdough)
  • Butter (Australians mostly use salted butter, but go with whatever kind of butter or non-dairy spread works best for you)
  • Vegemite

Method

  1. Toast your bread
  2. While the bread is still hot butter right to the edges
  3. Scrape a thin layer of Vegemite over the hot buttered toast
  4. Enjoy

Variations

Vegemite toast is an excellent foundation for other toppings. Common choices include eggs, avocado (so good!), fresh tomato or cheese. Or go crazy and add them all!

  1. First, I had no idea vegemite was black! Not seeing it and reading the name, I thought it might be green!!!
    Second, I am so glad you are getting better. I’ve missed you in my readings.
    Third, I love cinnamon toast-buttered exactly like you suggested on sourdough or whole wheat.

  2. Good morning Nicole – this brings back memories. I still use a very old Hotpoint toaster that you operate manually. You have to stand over it. And open the doors at the right moment! Still makes the best toast. Vegemite on toast was a favourite as a child. Also money was tight when i was growing up. It is an acquired taste but a variation is to butter the bread and spread vegemite a bit thicker and put it on trays in the oven to toast or use a grill. The vegemite takes on a different flavour. Still a favourite however my family are not keen. Hot vegemite drink – teaspoon in a cup, pour I boiling water and stir vigorously. Top up with milk. Have a lovely day, Anne

  3. Note to Nicole……. you can NEVER overdose on Vegemite(!), the more the better…. happy dance that you are recovering… take it easy… much love Paul

  4. I love this simple meal, on my off days I have been known to have it for dinner. If I have it in the house I will occasionally top if with some smooshed avocado. Good for the soul. I’m also hoping everyday will bring you returning strength and health.
