Hello, Lovelies!
I’m at home in my pyjamas right now, recovering from a crashingly bad case of strep throat and all of the complications that come with that from being immuno-compromised.
I can tell I’m getting better because I’m suddenly hungry for Vegemite toast and a good cup of tea.
Vegemite is the salty, malty, yeasty black spread that Australians have grown up with – similar to the English Marmite. It’s an acquired taste, and there is an art to using this black gold, so that you actually enjoy it. It’s great for breakfast, or as a snack anytime.
Sadly, most Vegemite novices throw Vegemite around like it’s Nutella, take a bite, are overwhelmed by the Vegemite overdose and then never come back for a second try!
Let me show you how it’s done.
Ingredients
- Bread of your choice (I’m partial to sourdough)
- Butter (Australians mostly use salted butter, but go with whatever kind of butter or non-dairy spread works best for you)
- Vegemite
Method
- Toast your bread
- While the bread is still hot butter right to the edges
- Scrape a thin layer of Vegemite over the hot buttered toast
- Enjoy
Variations
Vegemite toast is an excellent foundation for other toppings. Common choices include eggs, avocado (so good!), fresh tomato or cheese. Or go crazy and add them all!
