Hey, Lovelies.
I feel the need to bake. It’s one of the foundations on which I created my blog. Being in the kitchen is what makes me happy. It’s also how I manage stress.
I’m still not settled into the treehouse. I have stuff in boxes in three separate locations. I don’t have proper internet. Everything feels transient still. But I have a kitchen. I’ve unpacked some rudimentary baking stuff. I found my old, old, old recipe books. And I am deep in finishing next year’s Planner, supporting my community members who are going through hard times and end-of-life times, completely reworking my Membership and course offerings, and trying to set up my office without knowing where things are because when Ben started packing up the farm he failed to label most of the boxes.
It’s time to bake!
I’m thinking a coconut themed blast-from-the-past, as well as a few homely puddings and treats. I’m open to suggestions too. Anything you want me to have a crack at, just let me know in the comments. I’ll do my best over the months ahead.

This is an amazing recipe https://mealthy.com/recipes/1631/pressure-cooker-chicken-tortilla-soup just do not forget the tortilla chips and avocado when you serve this soup. I know it is for a “pressure cooker” but with you cooking knowledge I am sure you can convert it to a slow cooker or top-of-stove recipe. I always make enough for at least 1 more day. (it tastes better the next day.) Since this soup is found everywhere here in El Paso, think of it as I am sending you a bowl of comfort food from my hometown.
