Today I’m starting back on chemo for my sarcoidosis. It’s a bummer, but the drugs work, so I am doing my best to remain positive. It also means I am back on my strict diet, so I spent Sunday eating bread (including my body weight in bruschetta) and cheese and grapes and a little chocolate, and sipping decaf lattes and fresh juice – because those things are all OFF my eating plan for the next two months.
Thanks to coffee, I’m five thousand words down on my quest to cut twenty thousand words from my new magical realism novel, and I am hopeful that by Friday I will have that edit in the bag. Send positive thoughts, because this edit is HARD!!!.

🌞 Simple Summer Bruschetta
Right now, my kitchen is overflowing with ripe red tomatoes and fragrant basil, and honestly, there’s no better way to enjoy them than piled high on toasted bread. This simple bruschetta recipe is one of those quick, soul-satisfying dishes that tastes like sunshine and smells like happiness. It’s rustic, fresh, and best enjoyed outdoors with good company (or alone with a cup of tea and a good book for company – I don’t judge).
You’ll need:

4 ripe tomatoes, diced

2–3 cloves garlic, finely chopped

A small handful of fresh basil leaves, torn or chopped

1–2 tablespoons extra virgin olive oil
-
Sea salt and freshly cracked black pepper, to taste

Sourdough or crusty bread, sliced and toasted
To make:

Combine the diced tomatoes, garlic, basil, olive oil, salt, and pepper in a bowl. Stir gently and let it sit for 10–15 minutes so the flavours can mingle.

Toast your bread until golden and crisp.

Spoon the tomato mixture generously over each slice.

Eat immediately, while the bread is still warm and the tomatoes are juicy.
Optional: Add a drizzle of balsamic glaze, or rub the toasted bread lightly with a cut clove of garlic before topping for an extra punch of flavour.
